Cheesecake Ingredients :

  • Gelatin 2 and 1/2 tsp
  • Water 100ml
  • Biscuits 180 grams
  • Unsalted Melted Butter 100 grams
  • Heavy cream 200gm
  • Cream cheese 200gm
  • Icing sugar 100 gm
  • Lemon juice 2 tsp

Process To Make A Blueberry Cheesecake

Fill a pan with water, add the gelatin, mix it, and set it aside. Take blueberries in another pan and mash them well, then add sugar to the mashed blueberries. Now cook it for a few minutes on a medium-low flame. Take this sauce in a bowl and keep it aside. It’s time to crush the biscuits into the blender. After blending, transfer the mixture to a plate. Melt butter and add to crushed biscuits. Use a spatula to mix it well. Fill the 6 inches molted mold with the batter. Spread the batter evenly.

Now refrigerate it for 30 minutes. Take 200 ml of heavy cream or whipping cream. Beat until it reaches stiff peaks. Take cream cheese and beat it with the beater until it is smooth. Add icing sugar to it. Mix it until everything is well combined. After mixing, add lemon juice to it. Then again, mix it. Add whipped cream until it will well combine.

It’s time to melt gelatin on low flame. Add gelatin in more batches to the cream mixture and beat it. Mix it for a few seconds now, pour this mixture on the cake batter.

Pour the blueberry sauce on top of the cake batter and spread it evenly. You can give shape to it with a skewer. Refrigerate it for 4 hours.

Blueberry Sauce For Topping

  • Berries 200gm
  • Water 100ml
  • sugar 2 to 3 tbsp
  • lemon juice 2tsp
  • gelatin 1 tsp

Now take a pan and add berries, required water, and sugar in it. Now stir it. Add lemon juice and gelatin. Cook it for 1 min on low flame. Make sure to stir while cooking.

Remove the cake from the refrigerator, and pour sauce over it once the sauce becomes cold. Now, refrigerate the cake for 1 to 2 hours.

After 2 hours, take it out of the refrigerator and start to lose its sides. Gently remove the cake from the tin. Your delicious blueberry cake cheesecake is ready to eat.
